Kory Seder and his wife, Melanie Seder, own Good Food Low Carb Café. Seriously, if you haven’t been to this café, go! The food is primary local and everything is delicious. Melanie started the business as a food cart, and now she and Kory have expanded to two food carts in downtown Madison plus a café on Cottage Grove Road. Many of you have probably heard of the Keto Diet, but there are very few restaurants that specialize in this area. That is what makes Good Food Low Carb a must feature for Madison 52. What products and services do you offer?
Kory: We offer low carb, gluten free/grain free, healthy delicious food. We also offer catering services – everything from AM breaks, breakfast, lunch, PM breaks, to dinner. We have two Good Food food carts – Cart 1 on the Capitol Square and Cart 2 on Library Mall.

What made you want to be a business owner, specifically in your area of expertise?
Kory: My passion for entering the low carb food business was the result of a very personal health crisis. After multiple missed diagnoses, I was finally correctly diagnosed with Type 1 diabetes. I was over 30 years old. My background is in biological-sciences and I’ve always been interested in cause and effect, so managing the symptoms of diabetes became an experiment, so to speak. I learned and experienced how food, stress, activity and other variables impacted my blood sugars. There’s a lot of misinformation about how to control blood sugars, especially about how our food impacts blood sugar levels. Low carb foods are life changing and not only for diabetics. Everybody can experience benefits from eating low carb.

 

How long have you been in business?
Kory: Melanie opened the first Good Food food cart in 2010. The Good Food Low Carb Cafe opened April 3, 2017.

What is lesser known about your business that you wish more people knew?
Kory: I wish people were more aware of the impacts sugar and starch have on their bodies. Our business humbly presents healthy food, and we believe healthy food can radically change the world.
It is very rare to find restaurants specializing in low carb options. Ours is one of the few, worldwide!

Melanie: Low Carb does NOT mean Low Calorie. To us, healthy eating doesn’t mean counting or restricting calories or feeling hungry at the end of a meal. And if you’re hungry again less than 3-4 hours after eating a meal, you’re doing it wrong. We offer rich, satisfying, filling full-fat cream and cheeses in many dishes, plenty of animal proteins and fat, plenty of vegetables too, yes, but to us veggies are mainly a vehicle to eat protein and fat. These foods will not spike blood sugar or insulin levels which lead to weight gain. They will fill you up. I wish people would forget about counting calories and just eat real foods to satiety.

What is your favorite item you offer?
Kory: How about my three favorites – Bacon Wrapped Jalapenos, Bravo Salad and Key Lime Cheesecake!

Tell me why you love Madison.

Kory: Great diversity! It’s an athletic area with many outdoor activity options. There is a different level of interaction here … a small-town friendliness.

Melanie: I couldn’t leave Madison after graduating college here in 2008. It’s got just about everything you could want in a small city, including a killer dining scene and plenty to do outdoors.
